Leftover Turkey and Stuffing Waffles
Show of hands if you like leftovers.
After the American Thanksgiving last year, I saw this recipe featured on a show. I tucked it away determined to try it. And I have to say, it did not disappoint.
It is a great way to use up leftovers and make something appealing to the eyes and delicious on the tastebuds.
This recipe made 6 waffles for me. Here is my version adapted from professional chef Elizabeth Heiskell.
To make the waffles:
4 cups leftover stuffing
2 eggs
Approx 1/2 cup chicken or turkey stock.
For serving:
Leftover turkey
Leftover cranberry sauce
Leftover gravy
Directions:
1.) Heat your waffle iron and grease with cooking spray.
2.) In a large bowl, mix together the stuffing and eggs. Breaking up any large pieces as you go.
3.)Add about 1/4 cup of the stock to the mixture and stir until well combined. You can add additional stock if the stuffing mixture looks dry. You want it to look batter-like.
4.)Add the stuffing batter to your hot waffle iron. You will need to spread and flatten it out on the waffle iron as it doesn't flow the same as a typical waffle batter.
5.) Close the lid and let the stuffing waffle cook. Depending on your waffle iron, it will depend on how long this takes. For me, it took about 10 minutes. Try to resist opening the waffle iron lid.
6.)Once crispy and golden brown, remove the waffle from the iron and keep warm while making the rest of the waffles.
To serve:
1.)Place a waffle on the plate.
2.) Top with turkey and gravy.
3.) Add a spoonful of cranberry sauce.
4.) Serve with a side of your favourite vegetable. I served with brussels sprouts and it added an amazing pop of colour to the plate.
